Rosemount Estate 1999 G.S.M.

This is a great wine, and unfortunately I can't remember how much I paid for it -- it was reasonably priced when I bought it in Ireland in 2003, and it's definitely gone up in price. I recently found a bottle at Vinotopia in Vancouver, WA for around $90 (thankfully, the tastes are much cheaper, and it's everything I remember it being). What I liked most about this wine is how it changed over the course of a dinner. Some wines go "bang" out of the bottle and then deflate to bland and boring ... this one started big and fruity, and finished with a very "open" floral and vanilla. Really remarkable -- this is the first wine that really blew me away, and it continues to be my golden standard.
