Cadus 2002 Single Vineyard Cabernet Sauvignon
(about 1 year ago) buddy icon manual 90.0/100
Popped and poured in decanter. Color : beautifully dark and dark and dark (can't see my hand) on the tilt with very little change towards the edges. Nose : upon opening - WOW - the first thing that struck me was dark fruit and mud but on the background a unique hint of baloney dragged in gravel and dirt. there's also a wet veggie in there (the tips of green beans that have been in the fridge a bit too long?). a very small bit of cow manure as well. 2 hours in : fruit and gravel/dirt. paprika. very small amounts of the manure. a little more veggie than 2 hours ago. Taste : first pour - mud pie, blueberry tart. dust on the roof of my mouth up front. mids are dark berry driven with oak (not scaring me) dipped in chocolate. the tannins are medium but not mellow. they hit me inside the cheek along with oak (i'm still not running away) as the finish starts to shift with well integrated alcohol. there's a bit of creaminess to the front to mid on second taste. finish lasts about 20 seconds. 2 hours in : the tannins have actually strengthened and i get them all through the palate. there's a little spice kick just before the end. oak is definately present but it's not turning me off. i get a bit of creamed asparagus. the finish is now much heavier and in fact wonderful and lasts a good 30 seconds to a minute. overall an excellent glass of wine.
