We opened it up to breathe for about half an hour before our chicken and pasta evening fare. The initial nose was very intense, almost vinegary, which is fairly consistent with my experience with sangiovese. Over the thirty minutes the nose mellow out quite a bit however and developed a very noticeable scent of brown sugar. Sitting down for the meal, it was finally time to give it a taste. It hit home to an initial response of little more than “rather tasty.” It was full-bodied but also not in way that only makes sense if you taste it. It developed some nice flavors on the tongue. There was a darker fruit flavor up front, a pleasant leather taste on the sides of the tongues, and an excellent combination of espresso and chocolate flavors on the back of the tongue. The aftertaste combined the espresso flavors with a darker chocolate influenced South American coffee flavors. Letting the wine sit on the tongue for a while really brings out a black pepper note. Towards the end of the meal, the wine also developed a bit of a bite on the back of the tongue and left a pleasant tang after the meal. Very complex and highly enjoyable.
