Hand-harvested grapes are fermented in open tanks. Fermentation lasts 15 days, after which the wine is held in tanks for 10 months. The wine is moved to oak barrels where it spends the next 13 months. The winery owns 480 barrels of which 50% are Virginian oak and 50% Allier. The wine is lightly fined and bottled without filtration or cold stabilization. The wine rests in bottle for 6 months before release.

Allende 2003 Rioja
(about 1 year ago)Nose: Dark fruits--prune, blackberry--hints of vanilla and clove; marshmallow, honey and cream; all-spice (think aroma of pumpkin pie). Nice nose. Taste: Somewhat jammy up front. Resembles a Malbec or tame Shiraz more than other Riojas that I've tasted. Medium finish that, as is typical of Rioja, has small amounts of charcoal. Relatively well-balanced structure and integration of tannins. Decent finish Overall: if you're looking for a jammy Rioja, this is a nice wine to try.
