This Cabernet Sauvignon has only a touch of Syrah (less than 10%) to round out its deep berry/chocolate overtones. The Cabernet grapes from this vineyard has a fine balance of dark chocolate, blackberry and black cherry flavors, and tannin that has softened over 20 months of French oak barrel aging. Its maturity has come in its youth, and its earthy flavors will increase over the next 3-5 years. This vintage will age for more than 5 years to come and has ample tannin to soften, so that the wine will display more jam and currant flavors as it ages. A wine of such supple and aged characters such as our Cabernet should be decanted for at least 15 minutes before serving. Enjoy!
