Composition: 91% Cabernet Sauvignon 9% Malbec Vineyard Age of Vine: 7 years Soil Type: 50% in chalky well drained soil, 50% deep well balanced. Canopy management: No deleafing, lateral growth removal. Green Harvest at 80% veraisson. Yield: 8000 kg per hectare Chemical analysis Alcohol: 14.3 % by vol. pH: 3.84 Total Acidity: 4.72 g/l (tartaric acid) Residual Sugar: 1.9 g/l Volatile Acidity: 0.46 g/l Winemaking Harvest: Grapes were hand picked on the Estate between the last week of April and the first week of March and gently destemmed. All movements were via gravitational flow. Fermentation: Cold maceration of whole berries for 5 days. Half of the juice was inoculated with natural yeast then fermented in stainless steel tanks at 28ºC, followed by post fermentation. Pressing: Free run juice only. Ageing: Malolactic fermentation in barrels 50% French, 40% American oak and 10% Hungarian oak, 50% new, 50% one use, 50% of blend aged in barrels for 13 months. Somewhat matte ruby red. Aromas of black pepper, ripe strawberries, and just a subtle hint of leather for complexity. The alcohol is intense without reaching the point of excess. Best decanted to encourage the aromas to open: prune and jam, with chocolate in the background. Good weight and mouthfeel, with tannins that don’t hide the fruit. Long and sophisticated, but let it age another two years.
