Concha y Toro 2003 Puente Alto Don Melchor Cabernet Sauvignon
(over 2 years ago)Nothing life changing here. Cherry, raspberry, and currant are the core fruits, but they are muted under chalky tannins. Actually this wine really isn't showing much. This obviously needs some serious decanting, but I don't see anything that interesting in the flavor profile. Medium body with mild oak and some mocha on the finish. A solid cab, but overated.

(about 1 year ago)I decanted this wine for 4 hours before a dinner at one of the best restaurants in town. So my perspective is perhaps very different from others. This wine was awesome, and the best chilean i have ever had. When we first tried it, we had a crowd of waiters and bartenders who where betting that a chilean wine decanted for that long would not be very good anymore. And they where all wrong, the wine was superb, complex, with layers of fruit that lasted for a long time, and silky tannins that made it all perfect. I own a restaurant and have a very large cellar, and i have to say that this Don Melchor is one of the best wines i have tried in a while. My suggestion to others, Decant! Decant! Decant! it makes all the difference in the world.
